Flash freezing, also known as blast freezing, was introduced by Clarence Birdseye Clarence Birdseye Clarence Birdseye (December 9, 1886 – October 7, 1956) was an American inventor, entrepreneur, and naturalist, considered the founder of the modern frozen food industry. One of nine children, Birdseye grew up in Brooklyn before heading to Amherst College and began his scientific career with the U.S. government. › wiki › Clarence_Birdseye

(founder of the Birds Eye brand) in 1929. He discovered the process from watching fish being pulled up from under the ice in northern climates during the winter.

What is blast freezing technology?

Whereas standard freezers are kept at 0°C, blast freezing, also know as shock freezing, involves freezers kept at an air temperature of -30 to -40°C. ... A longer freezing process results in larger ice crystals, damaging the food and negatively affecting its flavour.

What temp is blast freezing?

The temperature of a blast freezer can vary from -10 Degrees Celsius (14 Degrees Fahrenheit) to -120 Degrees Celsius (-184 Degrees Fahrenheit) . The effective freezing temperature of various blast freezers vary depending upon a variety of factors.

Is a blast chiller the same as a freezer?

The difference between a freezer and a blast chiller is that a freezer holds food at below freezing temperature while a blast chiller cools food quickly by blowing cold air over the food product and gradually dropping the temperature in the chamber.

What is used in blast freezing?

How Do You Blast Freeze? A lot of blast freezers use blower fans which force cold air across the contents of the freezer in order to rapidly chill it.

How fast is blast freezing?

What is blast freezing? The Blast Freeze process requires that food be reduced from a temperature of +70ºC to –18ºC in no more than 240 minutes.

How is blast freezing done?

Blast freezing is the workhorse method of freezing seafood products in the fishing industry, simply because it is the most versatile. ... Blast freezing is the process of pushing cold air at high velocity across a food product in order to freeze the product as quickly as possible.

How much faster is a blast chiller than a freezer?

Blast chillers are designed to bring the core temperature of food from around 160°F or more down to 41°F or less in about 90 minutes. Most units will freeze food in four hours or less.

What is the best alternative to safely cooling foods without a blast chiller?

Approved methods to cool food

Ice paddles (plastic container filled with water and frozen) used to stir food in an ice-water bath. Adding ice as an ingredient (if water is an ingredient). Blast or tumble chiller.

Why cook chill system requires a blast chiller?

A blast chiller minimizes the product loss that occurs during evaporation, and the smaller ice crystals do less damage to the food when it thaws. In addition, blast chilling improves food safety by minimizing the amount of time food spends in the critical 135°-41° “danger zone” range for bacteria.

What is plate frozen?

Plate freezing is a fast freezing method, once the foodstuff is in direct contact with two cold metallic surfaces. This process is used when the food geometry has two plain and parallel surfaces. The smaller the thickness of the food between these two surfaces, the faster will be the freezing process.

What does a blast chiller cost?

The Freddy blast chiller retails for $2,900, and you can head to Irinox to shop and learn more about how it works.

How long does a blast freezer take to freeze ice cream?

Unlike the macro crystals that are formed on slow freezing, the micro crystals do not damage the structure of the product on defrosting so it keeps its original consistency without the loss of any liquid from the structure. Blast freezers can harden off the outside of the ice cream in around 25 minutes.

What is blast chiller used for?

The basic concept is this: a Blast Chiller is able to chill or freeze your food much faster than an ordinary domestic freezer - thereby locking in its essential nutrients and vitamins while inhibiting the growth of bacteria.

What is blasting chicken?

Blasted Chicken is So Easy

Roasting it at a higher temperature for a shorter time produces beautifully tender meat with absolutely no work at all. This method has been around for years, usually called Blasted Chicken, and it is incredibly easy.

What is blast freeze for an extra frozen creation?

Blast Freeze for an extra frozen Creation

We'll place your items in our Blast Freezer to make sure they stay a little extra frozen.

Where should towels be stored Sonic?

Clean towels should be stored in sanitizer Page 5 35.

What two body parts must be cleaned before food preparation?

• Wet hands with running water, (at least 1000F)
• Apply soap.
• Vigorously scrub lathered fingers, fingertips, and between fingers. And scrub hands & arms for at least 10-15 seconds.
• Rinse under clean running water.
• Dry clean hands/arms.

What is the fastest way to cool down hot food?

Cover pans of hot food and move them to a colder area e.g. a storage room, or stand them in cold water. You can also use ice to speed up chilling. This will make the contents of the pans chill more quickly. Stir food regularly while it is chilling down.

What does ice crystals in meat signify?

Those ice crystals you see on your bulk pack of chicken or in your frozen leftovers is moisture that escaped from the food and turned into ice on the outside. It happens for one of two reasons: Either you didn't store your food properly, or your food has just been in the freezer for a long time.

How are things flash frozen?

In physics and chemistry, flash freezing is the process whereby objects are frozen in just a few hours by subjecting them to cryogenic temperatures, or through direct contact with liquid nitrogen at −196 °C (−320.8 °F). It is commonly used in the food industry.

What are the benefits of a blast freezer?

Blast chillers and freezers work by rapidly decreasing temperatures of food products. Rapid cooling minimizes loss from evaporation compared to a normal cool process (like within a refrigerator). In addition, rapid cooling helps decrease the size of ice crystals that form in food when it is cooled and frozen.

Why quick freezing of fish is better than slow freezing?

Rapid freezing improves the quality of the food. The faster food freezes, the smaller the crystals that form. Small crystals do less damage to cell walls. Slow freezing produces large ice crystals that punch through cell membranes.

What is IQF technology?

In vegetable processing: Freezing. …a technology known as the individually quick-frozen (IQF) method. IQF is a method that does not allow large ice crystals to form in vegetable cells. Also, since each piece is individually frozen, particles do not cohere, and the final product is not frozen into a solid block.

What temp is a blast chiller?

Blast chillers drop food temperatures from 160 degrees F to 35 degrees F in 4 hours or quicker with some models. Blast chillers bring food temperatures down using a combination of cold and moving air across the product, which expedites the process.
